Pasta salad is a salad whose main ingredient is boiled pasta, to which is usually added finely chopped vegetables in a vinaigrette (or any other mayonnaise-based sauce). In addition, pasta salads are a classic that never goes out of style and can be combined to suit every taste. In places like the United States, it is a very common salad at the so-called salad bar.

Today I'm showing you an easy version of pasta salad with homemade Italian dressing.

Ingredients

  • Pasta
  • 1 pound rotini pasta

  • 1 pint cherry tomatoes, halved

  • 8 ounces fresh mini mozzarella cheese balls, cut in half

  • 1/2 - 1 cup chopped olives

  • 1 cup mini pepperoni

  • 1/2 cup pepperonini, coarsely chopped

  • 1/2 red onion, diced

  • Italian sauce
  • 1/2 cup extra virgin olive oil

  • 1/4 cup red wine vinegar

  • 1 teaspoon lemon juice

  • 2 teaspoons Italian seasoning

  • 1 teaspoon sugar

  • 1/2 teaspoon garlic powder

  • Pinch of red pepper flakes

Directions

  • First, you need to bring a large pot of water to a boil on the stove.
  • Prepare 1 pound rotini pasta according to package directions.
  • When it's finished cooking, you should drain the pasta and run it under cold water to cool the pasta.
  • Cut the tomatoes and mozzarella in half.
  • Italian sauce
  • Add 1/2 cup extra virgin olive oil to a bowl.
  • Add 1/4 cup red wine vinegar.
  • Add 1 teaspoon lemon juice.
  • Add 2 teaspoons Italian seasoning.
  • Add 1 teaspoon of sugar.
  • Add 1/2 teaspoon garlic powder.
  • Add a pinch of red pepper flakes.
  • Whisk it all together.
  • Our pasta should now be almost ready, so we can just toss it straight with the dressing.
  • It actually saves us a few meals if we make the dressing right in the bowl we're going to put the pasta in.
  • Add cheese, tomatoes, chopped olives, diced red onion, 1 cup mini pepperoni and chopped pepperoncini.
  • Stir it together.
  • Cover the bowl with plastic wrap and let cool in the refrigerator for at least 1 hour before serving.
