Banana bread recipe

Ingredients

  • 2 cups (250 g)all-purpose flour
  • 1 teaspoonbaking soda
  • 1/4 teaspoonsalt
  • 1/2 teaspoonground cinnamon
  • 1/2 cup (120 g)unsalted butter
  • 3/4 cup (150 g)brown sugar
  • 2 largeeggs
  • 1/3 cup (80 g)plain yogurt or sour cream
  • 4 largeripe banana
  • 1 teaspoonpure vanilla extract

instructions

  1. Set oven rack to lower third position and preheat oven to 350°F (175°C). Lowering the rack prevents the top of the bread from over-browning. Grease a 9x5" (25x10cm) metal loaf pan with butter or vegetable oil.

  2. Break up the bananas and set them aside. In a medium bowl, whisk together flour, baking soda, salt and cinnamon.

  3. Using a hand or stand mixer, cream the butter and brown sugar on high speed until smooth and creamy, about 2 minutes. With the mixer running on medium speed, add the eggs one at a time, mixing well after each addition. Then add yogurt, banana puree and vanilla extract, stir until smooth.

  4. With mixer running on low speed, slowly beat dry ingredients into wet ingredients until no flour remains. Don't overdo it. Add nuts or chocolate if desired.

  5. Pour the batter into a greased baking pan. Bake in the oven for about 60 minutes. After 30 minutes, cover the bread loosely with aluminum foil to prevent the top from browning too much. The bread is ready when a toothpick inserted into the center comes out clean and contains only a few small, moist crumbs. Depending on your oven, this could take as long as 60 minutes, so once the bread has been in the oven for an hour, start checking it every 5 minutes.

  6. Remove the bread from the oven. Let the bread cool in the pan for 1 hour. Remove bread from pan and cool on counter until ready to slice and serve.

  7. Banana bread can be stored at room temperature for 2 days or in the refrigerator for up to one week. Make sure to cover it so it doesn't dry out. Banana bread tastes best the second day after baking, when the flavors have time to meld.
